Ingredients: 

Onion powder

Paprika

Minced Garlic

Canola Oil

Three Potatoes

1/2 Box Baby Kale

1/2 package diced ham or bacon

Six Eggs

1/2 cup mozzarella cheese

Asiago cheese

Tortilla wraps

Instructions:

Grate three medium Yukon gold potatoes. This takes time, but it’s all worth the effort. Plus you’re adding your positive vibes into what you’re cooking!

Put the shredded potatoes in a cheese cloth or dish towel and squeeze the excess water into the sink.

Heat 100% canola oil, freshly minced garlic, a dash of onion powder and smoked paprika in a skillet.

Once garlic is sautéed add the potatoes. Let them get nice and crispy, then add kale greens.

While your potatoes are browning…

Simultaneously, whip six organic local eggs with a dash of milk (if dairy free, then use hemp milk).

In a separate skillet, crisp up diced (I love Applegate farms) honey ham or use bacon.

Then, add your whisked eggs, add 1/2 cup mozzarella and a small handful or so of shredded Asiago.

Continue to stir the hash browns until cooked.

In a large mixing bowl, once everything is cooked, mix everything together.

Once cooled off…

Once your egg, potato, and cheese mixture has become cool, then roll up Nature’s Promise whole wheat tortillas.

Wrap them individually in a paper towel, then Saran. Save for later!

Enjoy hot and steamy or cold for an on-the-go-lunch or grad school dinner!

Pro Tip: See if you can find organic local eggs that are high quality- the chickens most likely will eat carrot tops and other greens in addition to their organic feed making the eggs yolks bright orange, rich in B vitamins, choline, and iron. Any eggs will do though!

Get creative with your own variations: 

Try adding scallions, spinach instead of kale, pickles, chili powder, sautéed mushrooms, or nitrate free, local bacon.
